Shortcut 'Lasagne' Macaroni
Making lasagne is typically a time consuming process, but our shortcut version is ready with much less fuss. Kids will love the chunks of gooey cheese and won’t even notice the spinach! Serve with a tossed salad to complete the meal.

Ingredients:
- - 1 pkg ( 375 g ) Catelli® Healthy Harvest® Whole Wheat Macaroni
- - 1 lb ( 500 g ) extra lean ground beef
- - 1 onion, chopped
- - 4 cloves garlic, minced
- - 1 tbsp ( 15 mL ) dried Italian seasoning
- - 1/2 tsp ( 2 mL ) each salt and pepper
- - 2 1/2 cups ( 625 mL ) strained, puréed tomatoes, about 1 jar
- - 2 cups ( 500 mL ) 1% cottage cheese
- - 4 cups ( 1 L ) lightly packed baby spinach leaves
- - 1 cup ( 250 mL ) diced part-skim mozzarella cheese
- - 1/4 cup ( 50 mL ) grated Parmesan cheese
- Step 1 :Prepare the macaroni according to package directions; drain well and keep warm. Meanwhile, set a Dutch oven over medium-high heat. Crumble in the beef. Add the onion, garlic, Italian seasoning, salt and pepper. Cook, stirring, for 5 minutes or until beef is browned.
- Step 2 :Pour in the tomatoes and bring to a boil; reduce the heat and simmer, stirring occasionally, for 15 minutes or until slightly thickened. Stir in the cooked macaroni, cottage cheese, spinach, mozzarella and Parmesan. Cook, stirring often, for 3 to 5 minutes or until heated through and spinach is wilted.
